పల్లె నుంచి పట్టణం వరకు తెలుగువారికి పచ్చళ్ళతో మంచి విడదీయరాని బంధం ఉంటుంది. అందులో ఆవకాయ, మాగాయ ఇంకా అనేక రకాల పచ్చళ్ళను వెజ్ ప్రియులు ఆస్వాదిస్తారు.
మరి నాన్ వెజ్ ప్రియులకు కూడా నిలవ పచ్చళ్ళు ఉంటే బాగుండు అనిపిస్తుంది కదా! వాళ్ళకు తక్కువ ఖర్చుతో అందుబాటులో ఉండే పచ్చడి ఉంది కదా! అదే అండీ చికెన్ పచ్చడి (chicken pachadi / chicken pickle recipe). అత్తమ్మ చెప్పిన పక్కా కొలతలతో ఈ చికెన్ పచ్చడి పెట్టుకుంటే 4 నెలల వరకు ఎంచక్కా తినవచ్చు. ఏ కూర చేసుకున్న, ఏ రసం చేసుకున్న పక్కన ఒక్క 4 ముక్కలు పెట్టుకుని కాసింత అంటు పెట్టుకుని తింటుంటే ఉంటుంది… అబ్బా చెపుతుంటేనే నోరు ఊరుతుంది కదా ! అయినా చికెన్ ఇష్టపడని వారు ఎవరు ఉంటారు చెప్పండి.
నేను అయితే రుచులందు చికెన్ రుచి వెరయ్యా అంటా. నేనే కాదు చికెన్ లవర్స్ కూడాఅదే అంటారు. అలాంటి వారి కోసమే ఈ చికెన్ పచ్చడి ఇది ఎంతో సులభంగా ఎంతో రుచికరంగా ఎలా తయారు చేసుకోవాలో చూద్దామా మరి.
చికెన్ పచ్చడి ఎక్కువ కాలం నిలువ ఉంచడానికి కొన్ని చిట్కాలు
- చికెన్ పచ్చడికి బోన్లెస్ చాలా బాగుంటుంది. ఎముకలు లేని కోడి మాంసాన్ని ఎంచుకోవాలి.
- అన్ని చికెన్ ముక్కలు ఒకే సైజులో ఉండేలా చూసుకోవాలి కొన్ని చిన్నవి పెద్దవి తీసుకుంటే వేయించేటప్పుడు చిన్న ముక్కలు మరీ గట్టిగా అవుతాయి లేదంటే మాడిపోతాయి దాంతో పచ్చడి రుచి మారిపోతుంది.
- చికెన్ ముక్కలను వేయించుకునేటప్పుడు మంట ఎక్కువగా కాకుండా తక్కువ మంట మీద వేయించుకుంటే బాగుంటుంది. ఒకవేళ మీరు మంట ఎక్కువగా గనుక పెడితే ముక్క గట్టిగా మారి ఈ పచ్చడి రుచిగా ఉండదు. అప్పుడు పచ్చడి చూడ్డానికి ఎర్రగా కాకుండా నల్లగా ఉంటుంది.
- రిఫైండ్ ఆయిల్ బదులుగా గానుగ నూనె వాడితే ఆరోగ్యానికి కూడా చాలా మంచిది.
- ఎండలు బాగా ఉన్న సమయంలో ఫ్రిజ్లో పెట్టుకుంటే ఎక్కువ కాలం నిలువ ఉంటుంది.
- సాధారణ రోజుల్లో ఎండలో పెట్టకపోయినా మూడు నాలుగు నెలలు నిలువుంటుంది.
- నిమ్మరసం బదులు ఆమ్ చూర్ పొడి వాడుకోవచ్చు.
- పచ్చడని వెంటనే తినొచ్చు కానీ మూడు నాలుగు రోజుల తర్వాత ముక్కలు మెత్తబడి నూనె ఉప్పు మరియు మసాలా ఇవన్నీ ముక్కలకు పట్టుకుని చాలా రుచిగా ఉంటుంది.
- ఈ పచ్చడికి నాటు కోడి కంటే కూడా బ్రాయిలర్ చికెన్ బాగుంటుంది. నాటుకోడికి మాంసం తక్కువగా ఉండి బొక్కలు ఎక్కువగా ఉంటాయి అందుకే బ్రాయిలర్ చికెన్ తీసుకోండి.

- మూత టైట్ గా పెట్టుకోవాలి.
- తడి తగలకుండా చూసుకోవాలి.

Ingredients
- 1 kg చికెన్ ( బోన్ లెస్ చికెన్ )
- 3 tbsp కారం
- 3 tbsp ఉప్పు
- 1 tbsp పసుపు
- 4 tbsp అల్లం వెల్లుల్లి పేస్టు
- 2 tbsp ధనియాలు
- 1 tbsp జీలకర్ర
- 300 ml నూనె
- 2 inch దాల్చిన చెక్క
- 4 లవంగాలు
- 4 యాలకులు
- 8 మిరియాలు
- ½ tbsp ఆవాలు
- ½ మెంతులు
- 3 నిమ్మకాయల రసం
Instructions
- ముందుగా 1 kg చికెన్లో ఒక టీ స్పూన్ పసుపు ఒక టీ స్పూన్ ఉప్పు వేసి చికెన్ ముక్కలకు పట్టించాలి. బాగా పట్టించిన తర్వాత ఈ మిశ్రమాన్ని పక్కకు పెట్టుకోవాలి.
- పొయ్యి మీద కడాయి పెట్టి వేడయ్యాక రెండు టీ స్పూన్ల ధనియాలు, 8 మిరియాలు, మూడు యాలకులు, నాలుగు లవంగాలు, రెండు ఇంచుల దాల్చిన చెక్క, ఒక టీ స్పూన్ జీలకర్ర, అర టీ స్పూన్ల మెంతులు, అర టీ స్పూన్ ఆవాలు వేసి చిటపటలాడేంతవరకు వేయించి చల్లరాక పొడి చేసి పెట్టుకోవాలి.
- కడాయిలో చికెన్ ముక్కలు వేయించేంత నూనె పోసుకొని వేడి చేసుకుని ఉప్పు పసుపు వేసి కలిపి పెట్టిన చికెన్ మిశ్రమాన్ని కడాయి లో పట్టేంత వేసి గరిటతో కలపెట్టాలి. చికెన్ ఉడుకుతున్నప్పుడు నీరు వస్తుంది ఆ నీరంతా పోయేంత వరకు గరిటతో తిప్పుతూ తక్కువ మంట మీద చికెన్ అంతా లేత ఎరుపు వేయించుకోవాలి.
- వేయించుకున్నప్పుడే బాగా ఎర్రగా అయితే తర్వాత ముక్కలు నల్లగా అవుతాయి. కాబట్టి దోరగా అంటే మరీ ఎర్రగా కాకుండా దోరగా ఉన్నప్పుడే అందులో నాలుగు టేబుల్ స్పూన్ల అల్లం వెల్లుల్లి పేస్ట్ వేసి పచ్చివాసన పోయేంత వరకు బాగా మగ్గించుకోవాలి.
- తర్వాత పొడి చేసుకున్న మసాలాని వేసి గరిటతో తిప్పుతూ కారం ఉప్పు వేసి కలిపి వెంటనే దించేయాలి ఎందుకంటే మంట మీద ఎక్కువ సేపు ఉంచితే కారం నల్లగా అవుతుంది.
- కారం వేసిన అర నిమిషంలోనే కడాయి దించుకొని ఆ మిశ్రమాన్ని బాగా కలబెట్టుకుని రెండు గంటలు పక్కకు పెట్టుకోండి.
- పచ్చడి పూర్తిగా చల్లారిన తర్వాత మూడు నిమ్మకాయల రసాన్ని పచ్చట్లో పోసి మంచిగా ఇవన్నీ కలిసేంత వరకు కలబెట్టుకోండి.
- అంతే ఎంతో రుచికరమైన .. నాన్ వెజ్ ప్రియుల చికెన్ పచ్చడి రెడీ అయిపోయింది . ఈ పచ్చడిని మూడు నాలుగు రోజుల తర్వాత తింటే చాలా రుచిగా ఉంటుంది అప్పటికప్పుడే అంత రుచి అనిపించకపోవచ్చు.
