Ingredients
- 3 కప్పులు పంచదార
- 1 టీ స్పూన్ యాలకుల పొడి
- ¼ కప్పు జీడిపప్పు
- ¼ కప్పు పిస్తా
- ¼ కప్పు బాదం పప్పు
- కుంకుమ పువ్వు కొద్దిగా
- 1 కప్పు మైదా పిండి
- ½ టీ స్పూన్ వంట సోడా
- ½ కప్పు పచ్చి కోవా
- 2 tbsp వెన్న
- నూనె డీప్ ఫ్రై కి సరిపడా
- ¼ కప్పు పెరుగు
Instructions
- ముందుగా స్టౌ పై గిన్నె పెట్టి అందులో ఒక మూడు కప్పుల నీళ్ళు పోసి ఆ నీటిలోనే మూడు కప్పుల పంచదార ను వేసి చిన్న మంటపై పంచదార మొత్తం నీటిలో కరిగే వరకు కలిపి ఒక పది నిమిషాల పాటు మరగనివ్వాలి. మరీ తీపిగా పాకం కాకుండా గులాబ్ జామ్ చేసినప్పుడు చేసే చక్కర పాకంలా అయితే చాలు అలా చక్కర మొత్తం కరిగి పాకం తయారు అయ్యాక ఇందులో ఒక టీ స్పూన్ యాలకుల పొడి వేసి దించి పక్కన పెట్టుకోవాలి.యాలకుల పొడి వేయక పోయిన పరవాలేదు కానీ ఇది వేయడం వలన పాకం కి మంచి రుచి వస్తుంది.
- ఇక్కడ ఒక విషయం బాగా గుర్తుపెట్టుకోవాలి. చక్కర పాకం కి నీళ్ళు ఏ కప్పు తో అయితే తీసుకుంటారో అదే కప్పుతో చక్కరను తీసుకోవాలి. లేదంటే కోలతలలో తేడా వచ్చి పాకం సరిగ్గా రాదు.
- ఇప్పుడు ఒక పెద్ద చాక్ తో బాదం, పిస్తా, జీడిపప్పులను చిన్న చిన్న ముక్కలుగా తురిమి అందులో కుంకుమ పువ్వు కలిపి పక్కన పెట్టుకోవాలి.
- ఇప్పుడు ఒక పెద్ద బౌల్ తీసుకొని అందులో మైదా పిండి, వంట సోడా వేసి మొత్తం ఒకసారి బాగా కలుపుకొని ఇందులోనే పచ్చికోవా, వెన్న, పెరుగు వేసి ఏమాత్రం నీళ్ళు పోయకుండా చపాతీ పిండిలా బాగా ముద్దలా కలుపుకొవాలి.
- ముద్దలా కలిపిన ఈ పిండి నుండి కొద్ది పిండి తీసుకొని చిన్న ఉండలా చేసి దాని మధ్యలో గుంతచేసి అందులో కట్ చేసిపెట్టుకున్న డ్రై ఫ్రూట్స్ మిశ్రమాన్ని పెట్టి మీసేసి ఉండాలా చుట్టి చపాతీలు చేసుకునే ముందు ఒత్తుకునే ముద్దల్లా చేసి పక్కన పెట్టుకోవాలి.
- స్టౌ వెలిగింది మూకుడు పెట్టి అందులో డీప్ ఫ్రై కి సరిపడా నూనె పోసి నూనె వేడయ్యాక తయారు చేసి పెట్టుకున్న పిండి ముద్దల్ని ఒక్కొక్కటిగా నూనెలో వేసి లేత బంగారు రంగు వచ్చేంత వరకు వేయించుకొని ముందుగా తయారు చేసిపెట్టుకున్న పంచదార పాకం లో ఒక్కొక్కటిగా వేసి కనీసంగా ఒక 4 గంటల పాటు చక్కర పాకం లో నానపెట్టుకోవాలి. అప్పుడే చక్కర పాకం అంతా లోపలివరకు వెళుతుంది.
