Instructions
- ముందుగా స్టౌ పై గిన్నెలో నీళ్ళు పెట్టి ఆ నీళ్ళు మరుగుతున్న సమయం లో అందులో తరిగిన పాలకూర, 5 పచ్చిమిర్చి, 2 టీ స్పూన్ల ఉప్పు, ఒక టీ స్పూన్ వంట సోడా, ఒక టీ స్పూన్ చక్కర వేసి పాలకూర పూర్తిగా మెత్త పడేంత వరకు ఉంచి దించుకొని వేడి నీళ్లు అన్నీ తీసేసి ఉడికించిన పాలకూర చల్లటి నీళ్ళలో వేసి పాలకూర మొత్తం చల్ల బడెంత వరకు ఉంచాలి.
- సహజం గా ఉడికించిన పాలకూర కొద్దిసేపటి తరవాత కొద్దిగా రంగు మారుతుంటుంది. దానివల్ల పాలక్ పన్నీర్ వండిన తర్వాత ఆకుపచ్చ రంగులో ఉండదు. కానీ ఇలా చల్ల నీటిలో పెట్టడం వలన పాలకూర ఎంత సేపు అయిన ఆకుపచ్చ రంగులోనే ఉంటుంది.
- ఇప్పుడు ఇలా ఉడికించుకున్న పాలకూర మిశ్రమాన్ని, జీడిపప్పు మిక్సీ లో వేసి మెత్తటి పేస్ట్ లా చేసుకొని పక్కన పెట్టుకోవాలి.
- స్టౌ పై ప్యాన్ పెట్టి వేడయ్యాక అందులో రెండు టీ స్పూన్ల నూనె పోసి అందులో జీలకర్ర, ఆవాలు, ఎండుమిర్చి, సన్నగా తరిగిన పచ్చిమిర్చి కసూరి మెతి వేయాలి.
- వేసి కాస్త వేగనివ్వాలి. ఇందులోనే వెల్లుల్లి పాయలను వోలుచుకొని చిన్న చిన్న ముక్కలుగా కట్ చేసుకొని వేసుకొని లేత బంగారు రంగు లోకి వచ్చేంత వరకు వేయించుకోవాలి. ఇది వేగాక ఉల్లిపాయాలను చాలా సన్నగా తరిగి వేసుకొని ఇవికూడా లేత బంగారు రంగు వచ్చేంత వరకు వేయించుకోవాలి.
